To start a bouquet you first need to do Alchemy.  To start with you need to have one of the correct plants in your garden, and some dusts in your inventory (check the mushroom icon, top left).  For the Hare vase you'd need herbs, for the Fox vase you'd need Bellis Lycaena - you can be asked for any of the 7 colours of Bellis or any of the 7 herbs.  For the rainforest ones, it will be one of the Forest Jewels.

You then need to start with a pot - you can see which ones will work in the Wildlife Guide under each animal in the Gold tab.  Go to storage and click the Vase tab, click the pot you want to use, then click Make Vase.  You'll lose the pot when you get the Alchemy recipe right.

Clicking the Make Vase link takes you to Alchemy, where you work out your recipe for that pot.  You need to select a plant, a dust and a wand.  If you get none right, you can eliminate all of those things and try others until you get all three correct.

Once you have a vase you need to start by attracting and spotting one each of the animal the vase is named after (Hare for the hare vase, etc).  Once you've done that you have to find out the correct animals for the rest of the spots, and attract and spot one of each.  The Rainforest ones are easier for that, as there's only seven wildlife which will work.

When it's complete you have to wait for at least 12 hours, then it attracts one of the gold critters.  The bouquet will break, and you have to find the last critter again (it will be different to any still showing, and it won't be the same as the one which dropped off).  You can do that five times, then once you've attracted the five gold wildlife you can either store the bouquet to use as a decoration or you can harvest it to use the vase as a pot :)
