Carrot balls and spaghetti

2 large carrots
1 cup(s) breadcrumbs
1 medium onion, chopped
1/2 teaspoon(s) salt
1/2 teaspoon(s) thyme
1/2 teaspoon(s) Grace Caribbean Traditions Black Pepper
2 clove(s) garlic, chopped
2 large eggs
1 cup(s) Grace Vegetable Oil
1/4 cup(s) red sweet pepper, julienne
1/4 cup(s) yellow sweet pepper, julienne
1/4 cup(s) green sweet pepper, julienne
1 stalk(s) celery, sliced
1/4 cup(s) tomato, diced
1/2 cup(s) Grace Tomato Ketchup
1/2 cup(s) water
1 teaspoon(s) Grace Hot Pepper Sauce
1 teaspoon(s) honey

Carrot Balls with Spaghetti & Vegetables Directions

    Shred carrots and place in a large mixing bowl.
    Add breadcrumbs, onion, salt, thyme, black pepper and garlic.
    Whisk eggs and add to the mixture.  Use hand to bind the mixture.
    Cover and leave to marinate for about 10 minutes.
    Heat Grace Vegetable Oil in frying pan.  Shape carrot balls using 2 tablespoons of mixture for each and fry until they are brown on all sides. Drain on absorbent paper.

    TO MAKE SAUCE:

    Drain oil from frying pan leaving only about 1 ta

Not so far. It was a baby mouse, we think it's probably died somewhere under Scott's stuff under the stairs. xx
