The money for the building inspector i don't think is alot,  as he ensure your build will be done with no issues,  you hope.  Your chow mein sounds lovely,  ill try it one day. I made hamburgers last week and they were falling apart,  but I know where I went wrong,  don't use the panko breadcrumbs lol. My onion was also roughly chopped.
I remember as kids, the chow mein we had was with those dry noodles on top.
70 is very good value for a 4 sandwich press, mine is 2, a big 2 , enough for me.
