You will need more than one of each nest, or lots of repairing.

You only get the free superfood reward if you complete the challenge - by attracting 40 of each.

As Tracy said it’s more of a preference thing when it comes to how many. You technically only need one but then you’d have to repair it often so personally I would try for at least 2 of each 3 if you can manage that way you don’t have to constantly search for repairs and can make faster progress.

2 nests are certainly recommended for all the Dinos.
3 might be useful for the low level ones (if you are good with spotting/attracting the needed critters so you get lots of eggs).
More than 3 are redundant, I think. The eggs will keep hatching before you manage to collect more than 3.
And for higher level Dinos there will be no room for many nests (the setup for the egg attracting critters need many plants).

I found it is definitely easier to repair a nest as I go along. I completed diplos and stegos and velo with 2 nests each, sometimes using one of the lower nests as well and doing triceratops now with 3 nests, although most of the time only have 2 nests in the garden. It is handy to have a 3rd nest, incase the next critter due will drop egg before the other eggs have hatched.
