2 months in a row I have done the easy quest and have not even won the regular pottery vase which is unlimited.  whats up with that?

If you completed the quests before midnight GMT on the 3rd day of the Month, the Regular Pottery will be in your storage area.  There is a tab in storage which says Pottery Lottery.  Click on it and you will see all the Lottery pots you have won.

You should get the unlimited pot, if you don't win one of the limited ones. (Note: if you do win a limited one, then you only get that - you don't get the unlimited one as well, even if you completed the quest multiple times.)

You do need to complete the whole challenge (spotting and having stuff spotted) and then click to enter the lottery.

I guess you mean the wren chick.
You have to attract wrens in your garden. Every 10th wren spotted in your garden will nest.
If the wren is nesting, it will have a task for you ( to spot some birds in other gardens). If you complete the task, then you will get the egg and you can attract the wren chick.

The draw doesn’t take place until midnight on the third of the month. You won’t get any pot until that time.
