If I’m working on a seasonal quest and have the plants in my garden, but I pause it to work on something else and in the meantime the plant is no longer found in the gift shop, will I be able to go back to that quest to finish it anyway?

I am not 100% sure but would say as long as you have the quest activated and have at least one critter spotted or attracted that you will be able to complete the quest in the same way that you can still continue to complete a pottery lottery quest well after the end of the month (even if you miss the lottery cut off time)

At worst, I guess you can finish next year! You can't start an out-of-season quest (tried it), but don't know about reactivating.

You can't activate a paused seasonal quest out of season. I just tested it. I have the level I Winter Wonderland quest paused, and when I tried to activate it just now I got this message:

"Oops!
Sorry - that quest is not currently in season"

I finished the quest I had asked about, but I started a little test quest on level 1 to see what would happen today. I can’t go back to it til next year.

Good to know.

If i paused quest and start new, whether i can go back and finish paused quest without restarting it and removing spotted wildlife ?

Yes, that's how it works.   When you want to go back, pause your current quest then activate the one you want to restart.

Just don't reset it, since that clears your progress (so in effect cancels the quest).
