You can use the next colour down to protect the egg and ensure it won't hatch a lower colour. It requires some babysitting of the garden and can be time-consuming and expensive.
So you want a violet egg to hatch a violet chick. You'd want to get both a violet egg and an indigo egg into nests, then put out the food. If the indigo egg wobbles first, dump the food and try again. When the violet egg wobbles, let it hatch and the chick will be violet.
This works because each chick will hatch from the lowest colour egg that it can - so any red, orange, yellow, blue, green or indigo chicks that get programmed would go to the indigo egg.
