Can someone please remind me how to work with the poles

You've completed level I of the quests, so you can attract the Pyrenian Ibex with the mammal pole.  Just get it from the pot shoppe (it's free) and then click the "paint it" option on the pole.  Once painted, you can use it as an attractant for the Ibex as long as you have veggies out.

Thanks so much but I have accomplished that but did it when they were first an option. Forgot all about it so now can’t remember how to proceed through the steps

As Rachel said, you put the poles into your garden, hover your mouse over them, and click Paint It.

You've completed level 1 of the quests and attracted the first type of Extinct wildlife, so you will already have painted one section of your mammal pole.  If you stored it, you will be able to bring it out again when you need to.

You alternate between the two types of pole as you complete levels.  So when you complete level 2 you will be able to paint the first section of the bird pole.  Completing level 3 will let you complete the second section of the mammal pole, and so on.

Just to add: if you didn't store your mammal pole, you can still get a new one from the pot shop and paint the section you have unlocked again.
