Yes, the holly leaves are lite up - the holly berries and leaves light up separately.

Only the days you've spotted the wildlife for light up.  You've got 6 lit, but you're on day 17 so you've missed a few pots.

You lose it, like harvesting any other plant.  You save 10sq feet of rainforest, and you get a new blank snowman to start again.

Is there any way I can go back and makeup anything, would love to light up my garland.

You can't go back with the garland you have.  You could if you wanted discard it and start again with day 1, or you could complete it, store or  harvest it, then start a second one, also at day 1 :)
