I've been trying to spot one for a month I swear lol I kept missing them and it was between that and a pink fairy armadillo for my last flowers. It's the armadillo lol Glad I could help 🩷

You can earn the Enchanted Ruby by spotting Macaws in other gardens.  Your next multiple of 10 will drop the seed.

That would be to continue with the Rainforest wildlife.  You use the ordinary Forest Jewels for those though, not the Enchanted.

Do you have any Enchanted Jewels there?  You can use them for the Olinguito without having attracted other Rainforest wildlife.

If you still want Olinguitos, the Forest Jewels you've just planted will still not work.  They have to be Enchanted, as Rachel and Nicole said.  The Forest Jewels are the regular jewels, they are not the same.  If you have any, they will be in the Enchanted Jewel section of the seed shop (that section only appears if you've got some seeds there).
