1 large cauliflower cut into small pieces.
1/4 of smallbutternut pumpkin cut into fine dice .
2 kg onions cut into slices.
6 cups vinegar
2 cups water.
1,/2cup cornflour.2 tablespoons mustard
20 grams tumeric
Salt
2 cups of sugar. 1 teaspoon cayenne pepper (I use a tablespoon because we like the heat in it)
Put the cut up cauliflower, diced pumpkin and onions in a bowl sprinkle with 11/2 tablespoons of sea salt or cooking salt cover with water and leave overnight
Next morning, drain and rinse, put in large pot add 6 cups of vinegar and bring to boil ,simmer till veggies are cooked add sugar till dissolved
Blend the spices with cornflower then mix with 2 cups of water, then add to the boiling mixture simmer and stirring with a wooden spoon till it thickens let simmer for 30 minutes and bottle while still warm into sterilised jars.
I doubled the recipe because I had 2 cauliflowers.
