If you took a break from the chameleons you would have to get the plants fully grown again when you wanted to pick it back up.  You'd keep your progress so far as the numbers you'd attracted go, but you'd have to replant and get your plants back to where they were before you stopped.  It's a bit easier than when you did them the first time as you wouldn't have to attract 10 again of the ones you'd already done, just spot your next 10 to get the colours changed :)

You have to attract 10 yourself first.  After that, every multiple of ten you spot in other gardens changes the colour.
