Should I remove my Shroom to get my last 3 butterflies instead of WRCs? And should I plant a different mushroom? Or go mushroomless? I'm at the end and waiting for my rainbow butterpillarflora. Thanks.

You don't have a rainbow butterpillaflora planted, so you won't get a rainbow butterfly.  The red BP will only give a sunset dreamer butterfly

Yes, one from each plant unless you're lucky and get twins.

The giant panda is endangered and therefore will not visit as often as the WRC.
Although the bees are average and the WRC very rare, the bees you are attracting are worth more diamonds than the WRC and that is also taken into account when determining what will visit. Personally, when I hosted bee last year, I didn't use a mushroom at all, high plate, and a sunflower to turn the few mice that showed up into summer versions. I had great success without a mushroom.

Some gardens are using a Supershrom and a plate full of Panda. I am trying to get violet and indigo  bees so I can attract the Brown and Black Bear to finish quest.

Some have luckier plates than others. Giant pandas are difficult to attract because they are endangered. Without a mushroom, the mice are definitely more common. With a pink cap, the dragons are definitely more common. With a supershroom, the WRC is more common than any endangered wildlife. One thing you can do to increase attraction for the giant panda is to plant more than one bamboo plant. I know the bamboo seeds are 20 gold each, but it will increase the likelihood of getting a panda.

Bee are average and don't need any mushroom at all. I was able to host all bees (haven't worked on the bears yet) without using a single mushroom.
